Remember my goal this week? Get 5 servings of fruits and vegetables a day. Who knew it was going to be so tough? Definitely need to work on this one more! I had one day where I knew for sure that I had gotten all my servings in plus all the water I was supposed to drink for one day … and you know what? I felt FABULOUS! It made a huge difference. Lucky for me, I am taking part in a Better U Blog Challenge where I HAVE to eat 5 fruits/veggies a day to get points for big prizes. So hopefully here’s to more fabulous days!
One way I am getting more fruits and veggies is by using the Food Dehydrator my hubby got me for Christmas. I love it! I had a banana and some kiwis that I knew weren’t going to be eaten over the weekend so I cut them up and tossed them in the dehydrator. Voola! Snacks for the kiddos on the go next week and no food waste. Win-win.

Yay! I know what you mean, this is the hardest thing.
Danny (hubby) and I have this thing where we have to eat 2 fruits or veggies (or 1 fruit and 1 veggie…whatever) per meal. The rule is you have to eat them first. Hopefully this means you fill up on nutritious stuff. OJ doesn't count (sadly). It's been hard, but very fun. It means we basically have salad with every dinner, and fruit in every bowl of cereal. I made my own trail mix once with dehydrated fruits. It never occurred to me that I was eating more fruit. This is a tasty plan!
