Here we go on Week 2 of Project 52! Fifty-two weeks of personal goals. This weeks goal should be easy peasy, but I know that I am not reaching it. The goal:

5 Servings of Fruits and Veggies a day!
I think it is going to come down to tracking, planning ahead, and trying new things. Don’t get me wrong, I like fruits and veggies … it’s just easy to reach for my husband’s fudge or kid’s crackers sometimes. You know what I’m talking about … those sweet and salty cravings.

I got off to the right start on Saturday by purchasing a basket full of fruits and veggies from Bountiful Baskets. (fantastic co-op. huge basket of fruits and veggies for 15 bucks and you can also buy the yummiest bread you will ever eat!)

This morning I decided to go big – pumpkin puree, blackberries, and bananas!

… which resulted in this! Frenchy Pumpkin Toast. Now you have to check out Amy’s site. Her Super Healthy Kid’s blog is full of great recipes for parents and their small ones. You’ll definitely want to click on the link … her pictures are much prettier than mine!

So …. game plan for the rest of the week. Fruits and veggies get to be my snacks. In fact, I think a cucumber is calling my name as we speak.

I just started reading a book called the end of overeating that you might be interested in. Talks about how industry has engineered food to have the salt/sweet/fat contents that our brains can't resist. Very interesting and helpful information!

Ooh, that sounds yummy. I need to do better about getting my fruits and veggies in, too.
