Happy New Year! Hello 2012 :). I am kicking of the new year with www.orgjunkie.com and the Food Network’s weekly Healthy Challenge. This week’s challenge is to eat breakfast every morning. Breakfast is my FAVORITE meal of the day and I’ll be sharing some of my favorite breakfasts this week. I am also going to be doubling some recipes to use for later – now that I have three little ones – I need to make every second count :).

Making (and sticking with!) a Menu Plan is also my first goal for Organized Mom’s 12in12 Challenge. Can you tell I need some accountability? I am excited to link up with so many great blogs and challenges this year!

Breakfast:
1. My favorite Baked Oatmeal by the Enlightened Homemaker (x2)
2. Oatmeal Breakfast Bars
3. Scrambled Eggs and Fruit
4. Breakfast Burritos
5. Tote in Hole
6. Green Smoothie Cups

Lunches:
1. Cheesy Beans and Rice
2. Mini Cheese Scones and Turkey Rollups
3. Cheesy Potato Soup
4. Chicken Nuggets and Veggies
5. Leftovers
6. Egg, Avocado, and Bacon Sandwich

Dinners:
1. Turkey Macaroni Bake (x2)
2. Baked Chicken with Montreal Steak Seasoning, Salad, and potatoes
3. Spaghetti with Ground Turkey
4. Turkey Black Bean Quesadillas
5. Hamburger on Rice
6. Turkey with Mashed Potatoes and Veggies

To try later:
Pumpkin Quinoa Muffins
