So excited to participate in the Elf 4 Health Challenge! I am staying healthy for the holidays along with over 600 other bloggers and gals. We are paired with an “elf” to help us stay motivated and on track. Each day we have a different task to complete.
Today’s task is Meatless Monday.ย  My husband and I have cut back on meat this year anyway, so this task hasn’t been too difficult. The best part of today has been taking a peek at all the recipes the “elves” are posting in our facebook group.Check out my Pinterest board for some yummy recipes that I can’t wait to try.
Here’s what has ended up on my menu today:
Breakfast: Toast with tomatoes, one egg, and lots of grapes
Lunch: Quinoa with roasted broccoli, tomatoes, and onions
Dinner:ย  Gallo Pinto – my husband’s Costa Rican recipe! Pictures & recipe to come soon!

P.S. Made a mini break through with helping my littles eat more healthy. Typically my sweet little three year old is a cereal/toast man for breakfast. He saw me putting the mini table in front of the Christmas tree and setting up to take the pictures. Boy oh boy was he suddenly interested in what was on my plate. Memo to self: even little boys like there food to be presented nicely!
Tomorrow’s task: Write a note to a loved one. Anyone have a link to some darling stationary or printables to use? TIA!
